Can anyone recommend a simple, easy to fit and straight forward odometer/gizmo thingy? I'm after the basics: speed, distance, time etc.

I have a cateye velo wireless on the bike and use it or strava on my phone.

Have you looked at the Cateye Stealth 10? Looks like a decent budget GPS computer for around £50.

I picked up a Strada Wireless for about thirty-three quid. I'm pleased with it so far.

Garmin edge 200, it does exactly what you are after plus a bit more, also has a 14-16hr battery life between charges, fully waterproof and comes with two bike mounts, they can be bought for around £70 now if you shop around.
